• Discover your unique wine profile and connect with your senses as you learn to discern exceptional wines. Your advisor selects six cuvées crafted for your taste, guiding you through the nuances of each pour. This exclusive experience is a masterclass in professional wine tasting, offering a deep dive into the artistry that defines Château de Pommard exceptional wines.
Morning:
• Cradle of viticulture in Burgundy, the Château du Clos de Vougeot was built from the 12th century by the monks of Cîteaux Abbey and became the stronghold of viticulture in Burgundy. A Historic Monument, the Château du Clos de Vougeot is the head of the order of the Brotherhood of Knights of Tastevin and the headquarters of the Climats du Vignoble de Bourgogne (listed as a UNESCO world heritage site).
• It is at the Table of Léonce Bocquet, owner of the place from 1889 to 1913 that you are invited to share a friendly and emblematic lunch tasting of the region, commented by our sommelier.
• Enjoy a typical four-course Burgundian menu, consisting of a starter, a meat main course, Burgundy cheeses and a Vougeotin coffee (4 wines & 2 Grands Crus as tastings).
Afternoon:
• Visit the Beaune Hospice, a gothic-style hospital founded in the 15th century by the Chancellor of the Dukes of Burgundy. This hospital housed the poor as the 100 Years War was ending.
Known as one of the masterpieces of this type of architecture, step back in time and admire the incredible tiled roof, impressive courtyard, hull-shaped interior, and large kitchen and apothecary.
• With your local guide, discover the Fallot Dijon Mustard factory, a family business founded in 1840 that still caters to the most prestigious customers today. It is famous for the quality of its work and produce. Tasting included of course!
• We will have lunch at the “Cité de la Gastronomie et du Vin” in Dijon or the “Bistrot des Falaises” near Beaune, where we will taste regional specialties including boeuf bourguignon, gougères, and escargots as well as creative dishes composed of fresh local produce; depending on availability and the time of year, we can also participate in a wine tasting workshop hosted at the Cité.
• Visit a traditional creamery and meet Stéphanie and Christophe, the artisanal cheese makers at the helm of the Fromagerie Mussy founded in 1885. We will go behind the scenes of the fromagerie and finish with a tasting of cheeses such as Chaource, Délice de Mussy, Lys de Champagne-Ardenne and other specialties.
